20–25 fresh red chilies
10 cloves garlic, peeled
1 cup neutral oil (vegetable or canola)
2 tbsp white vinegar
1 tbsp sugar
1 tsp salt
1–2 tbsp water (as needed for blending)
Directions

Remove the stems from the chilies and roughly chop them. Use a large quantity of chilies, as they form the base of this sauce rather than a minor spice.

Add the chopped chilies and garlic to a blender with vinegar, sugar, salt, and a little water. Blend into a coarse or smooth paste, depending on preference.

Heat oil in a pan over medium heat.

Carefully add the chili-garlic paste to the hot oil, stirring continuously.

Cook for 8–10 minutes until the sauce thickens, the oil separates, and the strong raw chili flavor mellows.

Taste and adjust seasoning if needed.

Allow the sauce to cool, then store in an airtight container in the refrigerator.
