Chili Garlic Sauce
Chili Garlic Sauce is a fiery condiment made by using a large quantity of fresh red chilies as the main ingredient, not just as a flavoring. The chilies provide intense heat, bold color, and strong aroma, while garlic enhances depth and sharpness. This sauce is ideal for spice lovers and is commonly used to add powerful heat to noodles, rice dishes, dumplings, and stir-fries.
Remove the stems from the chilies and roughly chop them. Use a large quantity of chilies, as they form the base of this sauce rather than a minor spice.
Add the chopped chilies and garlic to a blender with vinegar, sugar, salt, and a little water. Blend into a coarse or smooth paste, depending on preference.
Heat oil in a pan over medium heat.
Carefully add the chili-garlic paste to the hot oil, stirring continuously.
Cook for 8–10 minutes until the sauce thickens, the oil separates, and the strong raw chili flavor mellows.
Taste and adjust seasoning if needed.
Allow the sauce to cool, then store in an airtight container in the refrigerator.
